You might be surprised to learn that The Jello Mold Mistress has a day-job. It’s summer! The arrival of the warm weather coincided perfectly with the first official day of summer and that means Fourth of July celebrations are right around the corner. Coquito

Inspired by Margarita, my Puerto Rican con-worker (at my non-jello day job), and her annual holiday offering of Coquito, Puerto Rico’s version of eggnog, I made a Coquito Jello for this year’s office holiday party. Loaded to the gills with rum (at least the way Margarita makes it) it has a creamy base of coconut milk and sweetened condensed milk and is spiced […]

Spiked Jello Poke Cupcakes

With homemade Nutella buttercream frosting!  This year for Victor‘s birthday I wanted to make something extra special. These vanilla cupcakes are special because they have stripes of strawberry rum […]

Strawberry Cheesecake

Maple Almond Jello

I wanted to make something very warm and fall-like for Thanksgiving this year. I found a maple leaf shaped baking pan and thought that maple gelatin would be the perfect fit. To balance the sweetness of the gelatinous pure maple topping, I used creamy almond flavored Dofu Delight gelatin as a base with a little brown sugar and vanilla added.  Have a Happy Thanksgiving!

Minty Watermelon Ice Cream

Get Well Jello (Godiva Chocolate & Cherries)

This jello mold was created especially for my friend Angeli who suffered an unfortunate climbing wall accident resulting in even more unfortunate knee surgery resulting in her being couch-ridden and hopped on pain pills for several weeks.  This black cherry topped jello mold is made with D’gari brand vanilla gelatin prepared with milk. In the mix is an added bonus of nearly an entire bottle Godiva chocolate liqueur (minus […]

Year of the Rabbit

This year the Chinese New Year, a very important traditional Chinese holiday, begins on February 3th.  In New York’s Chinatown the festivities carry on for weeks with the neighborhood adorned in red lanterns, lions and dragons parading through the streets, and fire crackers exploding with confetti. According the the Chinese Zodiac, this beings the Year of the Rabbit. And so, to honor the occasion, I made this white rabbit with anise […]

Vegan Vanilla Clementine Panna Cotta

I have had several inquires into vegan jello alternatives so I have been experimenting with Agar Agar, a flavorless, orderless, seaweed derived ‘gelatin’.  My mother gave me this tiny mold for Christmas and I thought it would be perfect for this recipe made with vanilla soy yogurt and clementine zest.  A creamy, delicate flavor that even an unrefined, carnivorous palate […]

A striking piece of engineering and architecture located a mere 500 yards from my apartment. The facility has been a point of interest for me since moving in to […]
