Two words: Cute and cute. (My favorite is the guy on the top right with the beady eyes and green star buttons!) Liven up Christmas this year with some jiggly, jello-y, gingerbread men, and women. Flavored with molasses, cinnamon, and nutmeg with a creamy base of sweetened condensed milk, these little ginger-jello people are as fun to decorate as they are to eat. 4 tablespoon (4 envelopes) of unflavored gelatin powder
1 cup cold water
2 cup boiling water
3 cups (2 14 ounce cans) sweetened condensed milk
1/4 cup molasses
2 teaspoons ground ginger
2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
2 teaspoons vanilla extract
Sprinkles to garnish
In a bowl, sprinkle gelatin evenly over water and allow the gelatin to absorb the water for two minutes. Stir boiling water into gelatin until fully dissolved. Stir in sweetened condensed milk, molasses, ginger, cinnamon, nutmeg, and vanilla until the mixture is smooth. Refrigerate until it begins to thicken. Spoon into baking sheet. Refrigerate until firm.
Dip the bottom of the baking sheet in warm water for 15 seconds to loosen gelatin. Use gingerbread man cookie cutters to cut the gelatin into shapes and lift from the pan. Decorate and serve.
