Piña Colada Shots

I could start this post with a joke about Rupert Holmes’ The Piña Colada Songbut I won’t. What I will say is that it’s summer and what better way to enjoy the warm weather than with a cold cocktail jello shot! Puerto Rico’s national drink since 1978 has just gotten a gelatin make-over. These little pineapple-shaped and flavored shots are made with coconut milk and a generous amount of rum. They were served up at Art & Marty’s house warming party and were a smash! As part of a series of summer themed jello shots I created for The Food Network, click through for the recipe and enjoy!
