Triple berry salad is a classic Jello recipe, but mine has a few twists. This sparkling treat is made with cranberry gelatin and tart pomegranate juice, along with vodka and club soda and is filled with blueberries, raspberries, and blackberries. It was served at a birthday BBQ to a crowd who had never tired my jello before and was devoured by a frenzied swarm of eager party goers. (I’ve never seen jello sell-out quite like this.) 2 (3 oz) packages of cranberry gelatin
2 cups pomegranate juice, boiling
1 cup cold club soda
1/2 cup cold vodka (or, if you prefer, you can add more vodka and less soda to equal 1 1/2 cups total)
2 cups mixed berries (such as blueberries, raspberries, blackberries, or any berries in season)
In a bowl, stir boiling pomegranate juice into both packages of cranberry gelatin until gelatin is fully dissolved. Allow to cool for 10 minutes and stir in club soda and vodka. Refrigerate until thickened to the consistency of a gel. Fold in berries and spoon into 5 or 6 cup mold. Refrigerate until firm. Unmold and serve.
