This is a new take on a very old-school recipe and I found it quite tasty. Made with fresh avocado and mayo, it’s a savory mold much like guacamole (minus the onions). Strawberries offer a contrasting flavor and an attractive garnish.

omg, that sounds (and looks) delicious! the main ingredients are things I love, avocado mayo AND strawberries! it seems the only thing that’s missing is coconut, and I don’t really think that’ll go very well with the avocado… 😉

Yes, here is the recipe. It was an adapted from an old recipe I found in a vintage recipe book:
Avocado Jello with Strawberries
1 envelope Knox unflavored gelatin
1/2 teaspoon salt
3/4 cup boiling water
1 cup cold water
1 tablespoon lemon juice
3 tablespoons mayonnaise
1 avocado, pared and mashed
Fresh strawberries
In a medium bowl sprinkle unflavored gelatin over 1/4 cup cold water until gelatin absorbs the water. Stir in boiling water and salt for 2 minutes until the gelatin is dissolved. Add 3/4 cup cold water and lemon juice and chill until slight thickened. Stir in mayo and avocado, blending well. Pour into individual molds and refrigerate until firm. Unmold and garnish with strawberries.
