This Rum Raisin Jello mold was severed for New Years and was a hit. In addition to rum and raisins, it’s flavored with sweetened condensed milk, eggnog,and cinnamon.
3 tablespoons (3 envelopes) of unflavored gelatin powder
1 cup dark rum
3/4 cup boiling water
1 cup of sweetened condensed milk
1 cup of eggnog
1/2 cup raisins
Ground cinnamon
In a medium bowl sprinkle the 3 envelopes of unflavored gelatin over the rum and allow gelatin to absorb the rum. Add 3/4 cup boiling water and stir for 2 minutes until gelatin is fully dissolved. Stir in sweetened condensed milk and eggnog. Add cinnamon to taste. Chill in fridge or freezer until thickened to the consistency of a gel and then stir in raisins. Spoon mixture into a 4 cup mold and refrigerate overnight until firm.
