Admittedly, I have been absent from the jello blogosphere for some time. My new job has been just the new start I needed and has also kept be super busy. But…. summer is here and with it comes more summer cocktail inspired jellos! Thus, I give you The French 75. An iconic drink of New Orleans made with gin (or cognac, depending on who you ask), lemon juice and topped with champagne. These jello shot versions (made with gin) were in celebration of a co-worker’s recent New Orleans destination wedding and again for a Memorial Day cookout to usher in the long awaited warm weather.
Who says jello shots can’t be romantic? Little strawberry cups hold gelatinous champagne topped with a little sprig of mint. This bite-size take on the classic aphrodisiac is sure to spark that Valentine’s Day romance… or, at the very least, get your date a little buzzed. Summer is waning (a fact which I am in complete denial about) but it’s not too late to squeeze in some summer-time activities such as lounging poolside while enjoying a giant, gelatinized Peach Bellini. Its been a while since I’ve made a large jello mold so for this year’s annual pool party with co-workers on Long Island, I decided to make this 5 pound Bellini in lieu of tiny jello shots. Fresh peaches and lots of bubbles are suspended in most of a bottle of peach schnapps and champagne making this a light, refreshing, and intoxicating treat.

Its been one year since my good friends Janejai & Conor had thier baby and to celebrate the occasion, this fizzy cocktail jello was served up (to the adults) at a parkside party. This recipe consists of lemonade with generous amounts of vodka and champagne. Blueberries are suspended throughout.
