
Recently I took the Jello Show on the road to my sister Kateri‘s in Minneapolis for my niece Sydney’s high school graduation party. My sister found this sunflower mold at a thrift store and had it waiting for me. Jello’s popularity in the mid-west has never wavered since the 60’s and that was evident by its enthusiastic reception at the party. For the event I made this Mint Chocolate Chip Ice Cream jello topped with sweetened condensed milk. Thank you Kateri and Congratulations Sydney!
Ingredients
5 packages of Knox plain gelatin
1 1/4 cup cold water
2 3/4 cups boiling water
4 cups mint chocolate chip ice cream
1/2 can sweetened condensed milk
Directions
Meanwhile, in a medium bowl sprinkle 4 package of Knox over 1 cup cold water until gelatin absorbs the water. Stir in 2 cups boiling water for 2 minutes until the gelatin is fully dissolved. Stir in ice cream until the mixture is smooth. Allow to cool to room temp and spoon into mold over the sweetened condensed milk layer and refrigerate overnight until set.

Where can I find the recipe for this? My grandmother-in-law used to make something with lime jello, mint chocolate chip ice cream and maraschino cherries. I’m wondering if this is the one!
