Freedom Jello

Its the 4th of July and nothing says “I love America” like a big ol’ red, white, and blue jello mold. This mold is strawberry jello with chopped strawberries, blueberry jello with blueberries, and  vanilla ice cream!

 

3 cups boiling water
1 package (3 oz) strawberry gelatin powder, or any red flavor
1 package (3 oz) blue gelatin powder
1 1/2 cup cold water
1 1/2 cup sliced strawberries
2 tablespoons package (2 envelopes) of unflavored gelatin powered
1 pint vanilla ice cream, softened
1 1/2 cup blueberries

Stir 1 cup of the boiling water into each of the red and blue gelatins in separate medium bowls at least 2 minutes until completely dissolved. Stir 1/2 cup of the cold water into each bowl. Refrigerate strawberry gelatin mixture until thickened to the consistency of the gel. Stir in strawberries. Spoon into mold and refrigerate until the gelatin is set, but not firm (should stick to you finger when touched).

Meanwhile, sprinkle the unflavored gelatin over 1/2 cup of the cold water and allow the gelatin to absorb the water for 2 minutes. Add 1 cup of the boiling water and stir until the gelatin is fully dissolved. Stir in the ice cream until the mixture is smooth. Refrigerate mixture to cool to room temperature and spoon into the mold over the strawberry layer. Refrigerate until the gelatin is set, but not firm (should stick to you finger when touched).

Refrigerate blueberry gelatin mixture until thickened to the consistency of the gel. Stir in blueberries. Spoon into mold and refrigerate until the gelatin is set. Unmold and serve.

      I came on here to see if there were any tips about using ice cream in molds and that horrible comment is what I saw instead! This website is AWESOME!! A friend of mine posted it on Facebook and my girfriends and I went crazy (in So Cal…not in a trailer park!). I was totally inspired to try a mold for the 4th of July. My first attempt I added the third layer too early and it totally went right through the ice cream layer. lol. It tasted good though. I’m going to give it another shot. I have another day to get it right. I can’t wait to try the champagne mold. Seriously…this site is killer!

    Where do I find the directions to make this fabulous-looking Freedom Jello? I see the ingredients but not sure how to make it.
