These were made especially for a surprise office baby shower for a couple of coworkers each having a baby, one boy and one girl. For Labor Day weekend I made this refreshing treat perfect for that end-of-summer BBQ. It is made with a layer of cool vanilla ice cream, topped with a layer of minty watermelon and rum. Yum!
