Mardi Gras starts this Tuesday! So before you go giving up anything for Lent, why not partake in some indulgent jello shots. Modeled after the traditional Mardi Gras King Cake, these tiny, crown-shaped treats are made with sweetened condensed milk, cake flavored vodka and a hint of lemon. Have a happy Fat Tuesday!
4 tablespoons unflavored gelatin powder
2 cups cold water
2 tablespoons lemon juice
1 cup sugar
1 cup sweetened condensed milk
1 1/2 cups cake flavored vodka
4 drops each of green, yellow, and neon purple food coloring
Pour the cold water and lemon juice into a medium saucepan and sprinkle the gelatin on top. Allow the gelatin to soak for 2-3 minutes, then begin to heat on low, stirring constantly until gelatin is fully dissolved (about 5 minutes). Stir in sugar until fully dissolved.
Remove saucepan from heat and allow to cool to room temperature. Whisk in sweetened condensed milk and stir in the vodka. Divide the mixture evenly between three separate bowls (just under 1 1/4 cup each) and stir one of each of the food colorings into each bowl.
Pour the green mixture into a 13×19 or equivalent sized pan. Refrigerate for about 15 to 20 minutes, checking it often, until the gelatin is set but not completely firm- the gelatin should stick to your finger when touched.
Then, gently spoon the yellow mixture into pan over the green. Again, refrigerate for about 15 to 20 minutes, checking it often, until the gelatin is set but not completely firm- the gelatin should stick to your finger when touched.
Finally, gently spoon the purple mixture into pan over the yellow. Spoon out any air bubbles that form and refrigerate overnight until firm.
Dip the pan in warm (not hot) for 15 seconds to loosen he gelatin. Use a mini crown shaped cookie cutter to cut out the shapes and serve.
