Cadbury Irish Creme Eggs

Jello jiggler style chocolate eggs cut from a tiny egg shaped cookie cutter are spiked with a generous amount of Irish Cream and topped with a sweetened condensed milk yoke. These super fun little treats are sure to be a big hit. Have a Happy Easter!

For this year’s drunken festivities, I decided to take it a step further with these little Peppermint Patty treats. Made with sweetened condensed milk and sitting atop a chocolate wafer, Peppermint Schnapps give these mini jellos their flavor and a little kick. Inspired by Margarita, my Puerto Rican con-worker (at my non-jello day job), and her annual holiday offering of Coquito, Puerto Rico’s version of eggnog, I made a Coquito Jello for this year’s office holiday party. Loaded to the gills with rum (at least the way Margarita makes it) it has a creamy base of coconut milk and sweetened condensed milk and is spiced with cinnamon, nutmeg, and allspice. As seen on CBS Sunday Morning (air date 9-9-12), this retro treat is made with a layer of sweetened condensed milk topped with peach gelatin and sliced peaches arranged like a bright sunflower. Inspired by the colorfully creative and talented Katie Sokoler and her blog Color Me Katie I decided to make a super bright and shiny Color Me Jello. And since it was Katie’s birthday and since she lives in my neighborhood, I decided I’d just pop by and present it to her. Tickled, she took some fun photos of me and my jello. For this jello I followed the Rainbow Mold recipe but added an extra top layer of suspended strawberries. Thanks for the wonderful photo Katie!

A little something special for Valentine’s day this year, I made this multi-layer heart shaped mold. The top layer is raspberries suspended in clear gelatin over a layer of sweetened condensed milk over a layer of raspberry gelatin over a crust of chocolate cookie crumbs. This was no easy feat so I hope my someone special loves it. Have a Happy Valentine’s Day!

Its that time of year again, Halloween! Its one of my favorite holidays and also the birthday of my friend Art. For this year’s annual Halloween/Birthday bash I wanted to make something extra creepy. I found this human heart shaped mold on eBay and filled it with black cherry gelatin, sweetened condensed milk, and vodka. A little melted down strawberry jelly for blood sauce adds the finishing touch. Happy Halloween everyone!

Commissioned by my friend Jill for her friend Ellen’s baby shower I created this cute little pastel jello. The traditional baby color bands are comprised of lemon, blueberry, and strawberry gelatin and mixed with sweetened condensed milk. Congratulations Ellen!

Fall is setting in in Brooklyn and with it come the fall-time jellos. This one is a remake of the Orange Spice Jello with a middle layer of orange gelatin, peaches, and rum, spiced with cloves, cinnamon, and the zing of vinegar. In addition, it has a top and bottom layer of sweetened condensed milk flavored with peach syrup and a touch of cinnamon. This jello was made for a going away party for my dear friend John who is off to the deep south to return to school. Good luck John! I miss you already!

My friends Art and Marty recently returned from gallivanting around Europe, Berlin and Amsterdam mostly, and brought me some Euro-gelatin from both destinations. The German Götter Speise gelatin came in three flavors Himbeer (raspberry), Zitronen (lemon), and Waldmeister, which I assumed was lime by its green color but is actually Woodruff and had an herbal flavor. Combined with a little Vodka I used these gelatins to create rainbow jello shots for a summer rooftop party.
Marbled Stained Glass Jello

Inspired by the Stained Glass Jello, I decided to get a little experimental with this year’s 4th of July jello. For these red, white, and blue mini molds I heated up chunks of stained glass jello, pre-made in a pan, directly in the molds themselves over the gas stove. It only took a few seconds for the jello to melt down enough to form to the mold and for the colors to run into this beautiful marbled pattern. For added patriotic enthusiasm, the strawberry and blueberry gelatin is made with a little vodka, all suspended in sweet and creamy condensed milk. Happy 4th of July!

For the past few months I have been cranking out the heavy, creamy, boozy, winter-time jello molds. But now that Spring/Summer is finally here, it is time to lighten up. This sweet and refreshing fruit pie was the perfect fit for this past weekend’s backyard brunch party hosted by Art. I used a pre-made shortbread crust which was a great compliment to the tart layer of peaches, strawberries, and blackberries suspended in peach gelatin over a creamy layer of sweetened condensed milk.

Whether you are planning for the future or just for this weekend’s Easter dinner, these little jello nest eggs would make the perfect dessert. The eggs are made from lime, cherry, and blueberry gelatin mixed with sweetened condensed milk. And the nests are made from melted white chocolate chips and toasted coconut molded into foiling baking cups. To mold the eggs, I drilled holes in the top of mini plastic Easter eggs through which I poured the jello and taped up the seams until it was time to hatch… I mean, unmold. Have a Happy Easter!

This jello mold version of the creamy, minty pie is sure to induced the luck of the Irish… or the crème de menthe liquour will just induce intoxication. In addition to crème de menthe, this rich jello is made with sweetened condensed milk, sour cream, and sits atop a chocolatey crust. The recipe for this appears in my new book. Red Bean Jello

Forget about those Red Roses and try Red Beans instead this Valentine’s Day. This heart shaped mold is made with red bean ice cream and trimmed with sweetened condensed milk. Rather than go for the obvious red cherry flavor, I wanted to try something more exotic. Red beans (also known as Azuki) are used in many Asian confections and when made into ice cream produce a sweet and unique favor. This mold, with its quilted texture and ribboned edges, reminds me of one of those cutesy, lace-trimmed, plush hearts you’d get from your junior high sweetheart (or your parents) for Valentine’s. Million Dollar Jello Salad

Inspired by my friend Shane’s favorite childhood dessert, Million Dollar Pie, this recipe was adapted for the jello mold. It is made with crushed pineapple, chopped pecans, sweetened condensed milk, and whipped cream. It has a sweet, tangy, foamy texture, akin to ambrosia salad, but better! This recipe will be included in my book along side other gelatin salad recipes.

Flavored with molasses, cinnamon, and nutmeg with a creamy base of sweetened condensed milk, these little gingerjello men and women are fun for all to decorate and eat.
