This year for Victor‘s birthday I wanted to make something extra special. I have made Jello Poke Cake in the past but wanted to trying something that would be easier to serve to a dozen friends out for a birthday brunch in the neighborhood. These vanilla cupcakes are special because they have stripes of strawberry rum jello inside. They are topped with an icing made with a blend of butter, sugar, and everyone’s favorite Nutella (an entire jar!). These were a sell-out hit at Victor’s brunch, everyone had two. Happy Birthday Victor!

I love cheesecake! But with the heatwave we experienced this summer who wants to slave away over a hot oven. The beauty of this cheesecake, made with cream cheese and sour cream, is no baking! It is rounded out with a strawberry gelatin topping and a cookie crust.

With the 4th of July BBQs right around the corner, this festive and fruity jello mold is the perfect compliment to your backyard get-together. Sweet strawberries and blueberries are suspended in refreshing and bubbly ginger ale. A little rum makes it a party favorite for the adults with an option make it non-alcoholic if you decide you want to share with the kiddies. Inspired by the colorfully creative and talented Katie Sokoler and her blog Color Me Katie I decided to make a super bright and shiny Color Me Jello. And since it was Katie’s birthday and since she lives in my neighborhood, I decided I’d just pop by and present it to her. Tickled, she took some fun photos of me and my jello. For this jello I followed the Rainbow Mold recipe but added an extra top layer of suspended strawberries. Thanks for the wonderful photo Katie!

Commissioned by my friend Jill for her friend Ellen’s baby shower I created this cute little pastel jello. The traditional baby color bands are comprised of lemon, blueberry, and strawberry gelatin and mixed with sweetened condensed milk. Congratulations Ellen!
Marbled Stained Glass Jello

Inspired by the Stained Glass Jello, I decided to get a little experimental with this year’s 4th of July jello. For these red, white, and blue mini molds I heated up chunks of stained glass jello, pre-made in a pan, directly in the molds themselves over the gas stove. It only took a few seconds for the jello to melt down enough to form to the mold and for the colors to run into this beautiful marbled pattern. For added patriotic enthusiasm, the strawberry and blueberry gelatin is made with a little vodka, all suspended in sweet and creamy condensed milk. Happy 4th of July!

For the past few months I have been cranking out the heavy, creamy, boozy, winter-time jello molds. But now that Spring/Summer is finally here, it is time to lighten up. This sweet and refreshing fruit pie was the perfect fit for this past weekend’s backyard brunch party hosted by Art. I used a pre-made shortbread crust which was a great compliment to the tart layer of peaches, strawberries, and blackberries suspended in peach gelatin over a creamy layer of sweetened condensed milk.

This recipe came from the classic Joys of Jell-O recipe book and boasts a new way to make the old fashioned confection. These strawberry, cherry, orange, and banana shaped candies are molded from ground coconut and almonds and are flavored with the corresponding fruit flavored gelatin. Whole cloves and mint leaves put the finishing touches on these tiny fruits. While the taste of the finished product bears little resemblance to actual Marzipan, they are sweet and yummy, especially if you like coconut, and were very fun to make.

For the holiday weekend I made this festive star-shaped mold with blueberries and strawberries set in a layer of clear gelatin. The white base layer is Guanabana flavored gelatin brought back for me from Mexico by Art. (More exotic Mexican flavors to follow). The flavor was fruity and refreshing, perfect for the very hot weekend. Happy 4th of July!
Jello Poke Cake

My friend Kelly LOVES cake. So to commemorate her birthday this year I made this Jello Poke Cake. It is a basic white cake with holes poked in it and liquid jello poured in and allowed to set. Typically it is made with fruit favors, as this cake’s top layer is strawberry, but I wanted to try something different for the bottom layer. I used D’Gari pistachio gelatin dessert made with milk and it was creamy and delicious! The cake is frosted with whipped cream. (The recipe can be found on the Kraft Foods website.) This year for John’s 5th annual Easy Breezy Birthday Brunch I made one of the more difficult and beautiful jello creations, the Rainbow Jello mold. This classic favorite is compromised of 10 layers and 5 different flavors, each with a clear fruity layer and a creamy opaque layer of sweetened condensed milk. Mini Avocado Molds with Strawberries

This is a new take on a very old-school recipe and I found it quite tasty. Made with fresh avocado and mayo, it’s a savory mold much like guacamole (minus the onions). Strawberries offer a contrasting flavor and an attractive garnish.

Starr told me about this strawberry Jello and cream cheese layered dish with a crushed pretzel crust that was a childhood favorite and a staple at family gatherings in her Pennsylvania hometown growing up. I’ve been wanting try it for a while so I made it for Starr for her birthday. I followed the recipe from The Girl Who Ate Everything. (In retrospect I would have used less Cool Whip, as little as one cup, as my cheese layer came out too runny and sweet.) Happy Birthday Starr!

This jello is more cake then jello. Its an angel food ring sunk down in mashed strawberries and strawberry jello. A slice is topped off with a dollop of whipped cream.

Laura (aka Lil Mama) brought this recipe to my attention. Its is constructed of blocks of strawberry, lime, and blueberry Jello suspended in a mixture of Knox and what I consider to be God’s gift to gelatin: sweetened condensed milk. MmmMmm!
Expect more sweetened condensed milk jellos because its really very amazing.
