Celebrate this holiday of Mexican heritage and pride with some little cactus shaped margarita jello shots. These are made with silver tequila, triple sec, and lime juice, and are garnished with a little Twizzler cactus bloom. These jello shots will be enjoyed this weekend at a Cinco de Mayo rooftop party.

Jello jiggler style chocolate eggs cut from a tiny egg shaped cookie cutter are spiked with a generous amount of Irish Cream and topped with a sweetened condensed milk yoke. These super fun little treats are sure to be a big hit. Have a Happy Easter!

Inspired by Margarita, my Puerto Rican con-worker (at my non-jello day job), and her annual holiday offering of Coquito, Puerto Rico’s version of eggnog, I made a Coquito Jello for this year’s office holiday party. Loaded to the gills with rum (at least the way Margarita makes it) it has a creamy base of coconut milk and sweetened condensed milk and is spiced with cinnamon, nutmeg, and allspice. This year for my Thanksgiving jello I wanted to do something retro. A take on the very vintage Tomato Aspic that your Grandmother may have brought to the Thanksgiving dinner table but with the added twist of booze. Its made with all the classic Bloody Mary components: tomato juice, vodka, beer, garlic, Worcestershire, and hot sauce, plus green olives suspended throughout. Initially I wanted make this recipe just for fun, but it turned out to be pretty good. I thought about adding some shrimp cocktail into the mix but figured I should just quit while I was ahead. Pumpkin Spice Latte

With the return of Starbucks’ seasonal favorite and slew of imitation recipes making the rounds, I decided I best jump on the bandwagon and make my very own pumpkin spice latte jello. More like a custard than a jello, it is made with milk, pumpkin, and coffee. Allspice and cinnamon give it a cozy, warm flavor and whipped cream rounds it out. And best part is that 4 servings of this jello mold will cost you less than a trip to Starbucks. Happy Fall and Happy Halloween!

This year for Victor‘s birthday I wanted to make something extra special. I have made Jello Poke Cake in the past but wanted to trying something that would be easier to serve to a dozen friends out for a birthday brunch in the neighborhood. These vanilla cupcakes are special because they have stripes of strawberry rum jello inside. They are topped with an icing made with a blend of butter, sugar, and everyone’s favorite Nutella (an entire jar!). These were a sell-out hit at Victor’s brunch, everyone had two. Happy Birthday Victor!

Though I consider myself a New Yorker, I was born and raised in the South and this twist on the classic southern cocktail takes me back to my southern roots. Like the traditional cocktail often served at the Kentucky Derby, this jello mold is made with sweet mint and bourbon. Tart blackberries balance out the sweetness and create a surprisingly cool and refreshing treat perfect for relaxing all day on the front porch of your southern farmhouse. Not all “jello molds” have to be made from gelatin and not all have to be super, sugary, sweet (although those are good too!). This uncommonly refreshing treat is made with watermelon, basil, and gelled with agar-agar, a vegan gelatin alternative. I don’t work with agar very often but I did devote an entire chapter it in my book, Hello Jell-O!. This recipe appears in my book but I have included it hear so you can try it before summer slips away. Even if you yourself are not vegan you can still enjoy this healthy and delicious treat… or you can make it for your vegan friend. We all have at least one.

Sweet and salty deserts are all the rage, and while you may not think to combine such flavors the outcome is really quite amazing. A little saltiness from the crunchy pretzel crust of this pie really brings out the sweet flavor of the peaches with a cool layer of creamy cheese in the middle. The peach layer, made with peach nectar rather than preflavored peach gelatin, is velvety and delicious with a dash of cinnamon and honey to give it a little spice. Bourbon Fog

Typically served as a punch, Bourbon Fog is made with equal parts coffee, vanilla ice cream, and Bourbon. The jello version has less bourbon so as not to overpower the main attraction- ice cream- but still manages to pack a little buzz. As a birthday request from Shane, he wanted something with ice cream and coffee. Because its not a party without a little booze, I factored in the bourbon and it was served at his birthday BBQ (and unofficial Spring/Summer kickoff party) last weekend. Happy Birthday Shane!

For Cinco de Mayo this year I wanted to make something sweet but also a little spicy. This cocktail inspired jello is made with homemade jalapeño infused tequila, lime juice, and triple sec.
