I’ve been wanting to make a cocktail inspired jello from this book for a while , and with a ton of rum on hand, I chose the Cafe Freeze. This cocktail hails from Chicago’s once great art deco eartey Arnie’s and is made with rum, tangy lime sherbet, pineapple gelatin, and garnished with lime slices. It was enjoyed at a basketball party over the weekend. (Go VCU!)
Million Dollar Jello Salad

Inspired by my friend Shane’s favorite childhood dessert, Million Dollar Pie, this recipe was adapted for the jello mold. It is made with crushed pineapple, chopped pecans, sweetened condensed milk, and whipped cream. It has a sweet, tangy, foamy texture, akin to ambrosia salad, but better! This recipe will be included in my book along side other gelatin salad recipes.

For the last in a series of Halloween jellos made for Kitchen Daily, I made these tropical fruit flavored versions of everyone’s favorite Halloween treat, Candy Corns. I used sweetened condensed milk, with orange and pineapple flavored gelatin. A second, larger version of this jello mold was created for this weekend’s festivities, only with the added bonus of rum! Boxing Kitten Launch Party

For my first Jello catering gig I was commissioned to make mini jellos for a 50s style, Hawaiian themed, fashion party for the vintage inspired clothing designer Boxing Kitten. I made mini versions of the Peaches & Cream Jello, the Mandarin Melon Jello, and Pineapple Jello.
Lobster Jello

My sister Kateri sent me this Lobster mold and I wanted to use it right away so I made a lobster jello for yet another Scorpio birthday, Jacob’s. This orange jello lobster with pistachio D’gari jello base is actually a remake of the original jello made for the party that did not turn out looking quite as expected.

In addition to Jacob’s birthday, the party was also to celebrate Hoover’s one year anniversary of living in our Brooklyn neighborhood of Greenpoint. To commemorate the occasion I made him these little green points of pineapple jello died green with vodka and topped with sweetened condensed milk.

Marty is extra excited about this gelatinous pineapple replica made with pineapple and lime jello and crushed pineapple. Rebecca found this mold in upstate NY and gave it to me. Thank you Rebecca.

Pina Colada Jello

I made this Pina Colada jello mold for Rebecca‘s birthday party. It is pineapple Jello with coconut milk and spiced rum, topped with pineapple slices and maraschino cherries. I was a little worried that it would be gross but it was absolutely yummy and a total hit! (So much so that during the party while I was up on the roof people where downstairs having their portraits made with the jello. Thanks Handel!)
