How-Tuesday: Raspberry Jello Cosmo

I was very excited a few weeks ago when Etsy invited me to participate in their How-Tuesday video series to demonstrate my jello making skills. For the video made a Raspberry Cosmo jello mold which I served at my friend Claire‘s annual birthday brunch. The mold is made with cranberry juice, triple sec, vodka, and lime juice with raspberries suspend throughout. Wassail Jello

Inspired by my friend Sydney‘s yearly holiday party tradition of brewing up some yummy hot wassail punch, spiked with dark rum, comes this cold, gelatinous version of the delicious treat.  Its made with apple and cranberry juice, slow simmered with allspice, cloves and an orange. Of course rum is added before it goes in the fridge for cooling and solidifying. This jello mold will be served up at Syd’s holiday party this week and I look forward to seeing how it stands up to its liquid counterpart.  This holiday recipe is another that will appear in my forthcoming book.

Thanksgiving is just days away and its time to start preparing for the feast (as demonstrated by the insanity I just witnessed at the grocery store). One good thing about jello is you can prepare in advance and unmold it before serving… cutting down on at least some of the last minute meal-time stress.  This pretty mold is made from tart cranberry juice, sliced apples, and cream cheese. Forget about cranberry sauce and throw this out on the dinner table instead. Pomegranate Berry Jello Salad (with Vodka)

Triple berry salad is a classic Jello recipe, but mine has a few twists. This sparkling treat is made with cranberry gelatin and tart pomegranate juice, along with vodka and club soda and is filled with blueberries, raspberries, and blackberries.  It was served at a birthday BBQ to a crowd who had never tired my jello before and was devoured by a frenzied swarm of eager party goers. (I’ve never seen jello sell-out quite like this.) The recipe for this can be found in my new book.  Thank you guys for your jello enthusiasm!

Still inspired by the Dim Sum dessert I had in Chinatown, I purchased a variety of flavors of DoFu Delight, “a favorite Asian treat”, from a Chinatown market. For this jello I used the almond favored agar dessert and cranberry jello.
