Cinnamon flavored whisky is all the rage at the moment and its my friend Katharine’s favorite bottle to bring to a party. So when she threw an end-of-winter party, I had to bring some Fireball Shots of my own… jello style! Akin to the Atomic Fireball candy we all chipped a tooth on as a kid, this jigglier, boozier version is all whisky and ginger ale. They were a smash hit at Katharine’s party and a fiery way to usher out the winter and welcome warmer weather. Happy Spring everyone!

Spiced Pears Cream Cheese

Its officially fall (feels more like winter) here in New York and that means its time for some “warm and fuzzy” fall jellos. Sugar and spiced pears over cinnamon cream cheese is the perfect addition to your Thanksgiving feast. This gelatin mold can replace traditional cranberry sauce and be the center of attention on the dinner table or when served up with the pies for dessert.

Bourbon Banana Pudding

Sadly the holidays are over and now all we have to look forward to is a long, cold winter… and jello! An adult version of the classic childhood favorite, this pudding from scratch is made with ripe banana, sweetened condensed milk, and a splash of bourbon. Spiced with cinnamon and garnished with mini vanilla wafers, the flavor is sweet and warm. This dessert is perfect for keeping warm during those longer winter months.

Coquito

Inspired by Margarita, my Puerto Rican con-worker (at my non-jello day job), and her annual holiday offering of Coquito, Puerto Rico’s version of eggnog, I made a Coquito Jello for this year’s office holiday party. Loaded to the gills with rum (at least the way Margarita makes it) it has a creamy base of coconut milk and sweetened condensed milk and is spiced with cinnamon, nutmeg, and allspice. Pumpkin Spice Latte

According to New York Magazine, pumpkin is the new bacon and the Pumpkin Spiced Latte is really trending this fall. With the return of Starbucks’ seasonal favorite and slew of imitation recipes making the rounds, I decided I best jump on the bandwagon and make my very own pumpkin spice latte jello. More like a custard than a jello, it is made with milk, pumpkin, and coffee. Allspice and cinnamon give it a cozy, warm flavor and whipped cream rounds it out. And best part is that 4 servings of this jello mold will cost you less than a trip to Starbucks. Happy Fall and Happy Halloween!

Pretzel Peach Pie

Sweet and salty deserts are all the rage, and while you may not think to combine such flavors the outcome is really quite amazing. A little saltiness from the crunchy pretzel crust of this pie really brings out the sweet flavor of the peaches with a cool layer of creamy cheese in the middle. The peach layer, made with peach nectar rather than preflavored peach gelatin, is velvety and delicious with a dash of cinnamon and honey to give it a little spice. I wrote this recipe especially for the Cooking Channel where you can find the recipe complete with process photos.

After an especially mild New York winter an early summer is starting to set in (hopefully I am not cursing myself into a May snow storm by saying this). For the summer I want to create a series of fancy cocktail inspired jello molds. This recipe, adapted from a cocktail recipe inspired by a dessert recipe, is a good transition with its summery peaches and wintery cinnamon. Filled with plenty of vodka, it is sweetened with honey, peach nectar, and a splash of vanilla soy milk. It was served last weekend for my friend Amanda‘s birthday.  Happy Birthday Amanda!

Holiday Gum Drops

Rusty gave me this wonderful candy/mini jello mold for my birthday back in November. And at some point Janejai sent me an inspirational email with colorful photos of homemade gum drops in wintery flavors. I put two and two together and turned out a whole bunch of these little gum drops for my holiday party I hosted over the weekend. Made in mint, cinnamon, and orange flavors and rolled in sweet sugar, the cinnamon was my favorite. These were a huge hit and really simple to make. Have a Happy Holiday!

Fall is setting in in Brooklyn and with it come the fall-time jellos. This one is a remake of the Orange Spice Jello with a middle layer of orange gelatin, peaches, and rum, spiced with cloves, cinnamon, and the zing of vinegar. In addition, it has a top and bottom layer of sweetened condensed milk flavored with peach syrup and a touch of cinnamon. This jello was made for a going away party for my dear friend John who is off to the deep south to return to school. Good luck John! I miss you already!

Inspired by the Japanese cherry jelly treat Sakurando, these little cherry bombs explode with flavor. These bite-size jello shots are made from cinnamon flavored schnapps and maraschino cherries, and made a huge impact at Art and Marty’s first BBQ of the season. Happy Spring!

Apple Goat Cheese

Flavor Tripping parties have been growing in popularity over the last several years and I finally got invited to one. The idea behind these parties is that one consumes Miracle Fruit, a berry that makes sour, spicy, and some savory foods taste sweet (for about an hour), and then sucks on lemons and pours tabasco sauce all over their tongue to experience the unfamiliar flavor sensations (and wakes up the next morning with chapped lips and a tummy ache). I wanted to make a jello for the occasion but didn’t want to go with the obvious choice and make a really sour lemon or lime jello that, with the miracle fruit, would just taste like, well, jello. So upon more research I decided upon sour apples and goat cheese.  I stewed tart granny smith apples in cinnamon with slightly sweetened plain gelatin for the top layer, and softened goat cheese mixed with a small amount of cinnamon and sugar on the bottom layer. On its own it was quite tasty, although a little more sweetness would have brought out the flavor. But with the miracle fruit the result was sweet, buttery, Apple Pie!

For Christmas with the family this year, I made these little gingerbread flavored jello jigglers.  Flavored with molasses, cinnamon, and nutmeg with a creamy base of sweetened condensed milk, these little gingerjello men and women are fun for all to decorate and eat. Inspired by my friend Sydney‘s yearly holiday party tradition of brewing up some yummy hot wassail punch, spiked with dark rum, comes this cold, gelatinous version of the delicious treat.  Its made with apple and cranberry juice, slow simmered with allspice, cloves and an orange. Of course rum is added before it goes in the fridge for cooling and solidifying. This jello mold will be served up at Syd’s holiday party this week and I look forward to seeing how it stands up to its liquid counterpart.  This holiday recipe is another that will appear in my forthcoming book.

Its is officially winter hear in New York as the day time highs have dropped to 35° and snow flurries have begun to fall in the morning. This winter-time jello mold can help you warm up. Inspired by Mexican spicy hot chocolate this jello is made with real milk, cocoa, and hot chili powder.  The combination of sweet, rich chocolate and spicy chile creates a very exotic flavor, topped will cool whipped cream and garnished with coco powder. This is the first of many jello recipes to come that will appear in my new book I have recently begun work on.  Stay warm!

For many, pumpkin pie is synonymous with Thanksgiving and this jello recipe was inspired by my mother’s own recipe for pumpkin pie, served every year for turkey day without fail.  Its made with canned pumpkin, sweetened condensed milk and spices like cinnamon and nutmeg.
