Commissioned by my friend Jill for her friend Ellen’s baby shower I created this cute little pastel jello. The traditional baby color bands are comprised of lemon, blueberry, and strawberry gelatin and mixed with sweetened condensed milk. Congratulations Ellen!
2 (3 oz) packages of lemon flavored gelatin
1 (3 oz) package of blueberry flavored gelatin
1 (3 oz) packages of strawberry or cherry flavored gelatin
3 cups boiling water
2 (14 oz) cans sweetened condensed milk
In a medium bowl, stir 2 cups boiling water into the 2 packages of lemon gelatin for 2 minutes until gelatin is fully dissolved. Stir in 1 (14oz) can of sweetened condensed milk until the mixture is smooth. Allow mixture to cool to room temperature.
Meanwhile, in 2 separate a medium bowls, stir 1 cup boiling water into each packages of strawberry and blueberry gelatin (each in their own bowl) for 2 minutes until gelatin is fully dissolved. Stir in 1/2 of a (14 oz) can of sweetened condensed milk into each bowl until the mixture is smooth. Allow mixture to cool to room temperature.
Spoon half of the lemon gelatin into a 6 cup mold and refrigerate until gelatin is set but not firm (the gelatin should be mostly solid but stick to your finger when touch). Then gently spoon half of the strawberry gelatin into the mold and refrigerate until gelatin is set but not firm. Repeate this process for the blueberry gelatin, followed by the rest of the strawberry gelatin, followed by the rest of the lemon gelatin.
Refrigerate overnight, unmold and serve.
Note: If you want to make your mold less yellow and more blue or more pink (such as if you know the gender of the baby) you can double up on the strawberry or blueberry gelatin and use less lemon.

With the strawberry mixture, it looks too red and not really pink at all as I’m mixing. Is this the way it should look??
You can add a tablespoon or 2 of sweetened condensed milk if the color is not coming out as light as you would like. Thanks!
